As for the ammonia smell, if it's present in the fillets, it will taste bad. If you don't smell any ammonia odor, it will taste good. And as you said, the key to not having the ammonia smell is to bleed the shark, and gut it ASAP, then get it on ice as quickly as possible as well. But there's one more thing that helps tremendously, don't fight it any longer than what you have to! The urea that's in the blood gets pushed through the muscle/meat of the fish when stressed.
However, there are methods you can incorporate to remove the urea/ammonia smell from the meat if it's present. Some say soak in iced saltwater for 24 hours, changing the water several times. Some say soak in buttermilk, some say regular milk.

Hej! I have a question, there's a ton of people fishing that bridge, losing alot of gear, it's a part of fishing. Is there any cleaning of the area?
In some places they do a collective dive every 3 months-once a year just to collect cut line.
This seems to be a sketchy place, current and sharks. is it possible to dive safely?
I've seen spagetti forests of line with dead fish, crustaceans and birds in them.
Anyway, great video as always, I'd love to taste bullshark, I've never been super impressed with the sharks I've tried, but still ppl tell me it's good: )

ok the camera guy doesn't film the action. Is he afraid of dropping it? I love your videos, but please show us the action in the water and not just you reeling the fish in. I would love to see how fired up the bull sharks are but your camera guy doesn't film the action until the last second or 2

I have been in Florida for over 10 years now and I haven't had Shark yet. I did have it years ago at the Banana Boat in West Palm and once in Pittsburgh, PA. My mouth was watering the whole time you were cooking it and your friends were eating it. Thanks for another great video

So sick. Even on simple things like sliders, the uniqueness, appearance of your food and presentation always looks like it's straight out of a high rated restaurant. Really like how these videos are a full story between the trip and the recipe. Awesome stuff man.

Bull-sharks urinate throughout there entire bodies, once dead the urine just sits there and definitely effects the taste of the meat. Only shark I would ever eat are mako and blacktips love Vince s videos but personally would never keep a bull shark

Thanks for putting in the work to thin them out. Sharks numbers are way to high up here in North Florida, it's gotten hard to get any fish to the surface. That 54 limit does make them dangerous to harvest in a boat.

Do you guys ever use steel leaders? Every time I fish of my dock the steel leaders don t let the sharks break off and I can still catch little snapper and catfish with it on
