this is purely speculative, from my knowledge of basic physics and biology, but hear me out.
TL; DR: Not energy efficient, too heavy, and ships nowadays have weaponry to heavily injure any creature, be it a salamander or a kraken.
those tentacles and the rest of its body are incredibly heavy. there is a reason most big animal life is in the sea, because there they can just float about, and feed off of micro-organisms. Larger predatory creatures are terribly energy inefficient, and would likely use more energy trying to catch prey than what it gets from the prey. Theres also a problem that due to size, it takes a bit longer for food to go to the stomach, which especially with most marine life swallowing their prey alive has a great risk of letting prey out anyways if captured. The big size also comes with the problem of longer nerves, so it takes slightly longer for nerve signals to go to where they need to, and especially as a predator having a terrible reaction speed is not the best thing. it likely also would not prey on ships (intentionally) would you eat a bunch of wood with small bits of meat if you were really hungry? me neither. the big size and weight of the kraken also comes with the fact that merely latching onto a ship either immediately brings the ship to the seafloor, or the kraken would require a lot of energy to not accidentally lose its grip. Their tentacles are also probably way heavier than preferable, and would not be as maneuverable as shown in many depictions of a kraken, due to the immense energy and force it requires to lift them above water. Another comparison of why krakens would not really eat ships is, would you spend a lot of energy opening a box of little carrots if there is a huge chunk of food near your reach? If the kraken does not go extinct it would likely evolve to ignore huge shadows near the surface as it learns that these are usually prone to fighting back with huge force (guns) and much rather go for whales that cant really fight back.

I don't think a kraken would pull a ship underwater the same way you pull a balloon. After breaking it with the force to crush wood water would get in and you'd need very little strength to pull it under. A kraken probably would eat whales more often then ships crews. The largest ship is way harder to sink than a whale is to kill, and will probably only have 100 200 lb men and their weight in food for 40, 000 lbs of edible meat. Sperm whales match that weight or can exceed it 2 fold, blue whales exceed it 5-7 fold. But many ships can have as little as 1/20th of the amount of the largest, and a kraken can't tell which by size. Also sea travel hasn't existed long enough on evolutionary scales for krakens to rely on primarily. A kraken would sink a ship confusing it for a whale like great whites confuse surfers for seals. And probably desensitize sea travel as much as sharks do surfing

It probably is, my mothers friend has a cousin that built a ship together with 7 others to sail to the north pole to see the northern light, they left the Netherlands but a huge storm swept by and shippers from Whitby found them in the middle of it. They safely arrived in Whitby and 3 of the 7 decided to stay and didn-t want to go anymore, the cousin being one of them. The other four went on to see the northern light. Then they said bye and never spoke or seen them again and became a mystery, according to myths where the Kraken appeared they must have crossed those waters, like a treasure at the bottom of the sea they probably sank. Then again just a myth!

It probably wouldn't target humans, at least not of that Era, realistically an entire ship full of humans would be more effort and less food for that effort than whales, large sharks and squid, ect. nothing would compare to it's size or strength so it would have it's pick of food, why eat a couple hundred humans when you can eat 5 sperm whales and feel just as full, in today's world where aircraft carriers and large battleships exsist, and anywhere from a couple hundred, to almost a thousand can be on board at any one time, it may be worth it if food is scarce

To be fair a creature that size would most likely have a lifestyle where it keeps to itself and just wants to be left alone, probably living in a cave under some remote island. as for the population, there might only be 1 individual at any point in time. and lays an egg only once near the end of its life. and to be perfectly honest, saying that it doesn't want fish, and wants to eat specifically humans, is kind of rude. naturally it WOULD eat fish. it doesn't really care about you unless you annoy it.

If it is as big as a few small Islands, we are mere microscopic compared to them, kraken doesn't have a microscope so it wouldn't be able to see us, you can't eat something you can't see
Even a ship would be the size of a grain of sand to them and ships are not edible so eating hundreds of ships wouldn't even work
Though it could survive eating hundreds of Wales a day

Today now we have SUPER cameras. Super video and image, why NO photos or NO videos? MAYBE he/she existed a centuries ago, when Napoleon, Mozart and George Washington were alive, but today the big fella is definitely dead, no doubt about it, because someone would be captured on film or on photo.

This is assuming a real kraken would be man-eating, which I very much doubt since animals usually prey on other animals native to their habitat, which humans aren't
