Ahsoka Tano's White Lightsabers were already explained in the Star Wars Lore and in Star Wars: Rebels.
As we ve noted, Ahsoka s effort to create lightsabers from stolen kyber crystals had the effect of turning them from red (the Sith color) to white. This wasn t a random development.
Ahsoka s disaffiliation from the Jedi Order following the Clone Wars meant that she could not wield the standard blue lightsaber. At the same time, she was also free of the corrupting influence of the dark side, so the red lightsaber was also not an option. She was, in effect, independent of both sides, although sympathetic to the Jedi cause. The crafting process essentially purified the kyber crystals, turning them into a color that befitted her status as an autonomous individual. This is how Ahsoka Tano s lightsaber was born and what the white lightsaber represents a force for good, but free of the burdens and restrictions of bureaucracy.

To me there is an interesting reflection upon the colors, if we decide to embark in a collective understanding that the colors actually mean something, of course. The color of the padawan's saber is blue, a primary color, while the color of the jedi master is green, a secondary color. Then we have the complex cases: Rey and Ahsoka. Rey's lightsaber is yellow, also a primary color, but maybe that means she is not any primary (any padawan) yet she is reluctant to embrace her powers, because of who she is. Ahsoka's saber being white, which is the combination of all colors, could mean that she is everything. Padawan, master, and sith. Meaning there is not a style to her fighting as well as that she might give in to her feelings of anger and hate.

Light saber colors come from the crystals used to charge them. There's no hard rule to the colors other than red is for Sith, because they are corrupted. Grey Jedi often use white, symbolizing balance.

Only few small nitpicks, the lengths of her Lekke, and the way she was holding her sabers, she normally holds them inverted in most of her duels, or attacks, other than that she was spot on.
