Actually you don't need to give them a water break, gill based creatures can survive as long as their gills are even a bit wet. as long as it didn't complete dry up you didn't need to put it in the water.

the shark is probably a horned shark or a cat shark and they can breathe out of water for a while to help with the issue of them getting stranded in tide pools so that shark would have been fine either way

These sharks have the ability to survive without oxygen for long periods of time and walk along coral reefs and seabeds. This dude didn’t save it, just stressed it out

Actually, the baby shark was hiding from predators in the shallow waiting for high tide, he just put it back in the deeper water for the predators.
