Man, there are so many flexes in One Piece, you could do a top 100 and still not get them all.
-Robin going full demon on Black Maria
-Franky literally driving a motorcycle over Big Mom's face
-Sanji crafting a wedding cake in only a few hours (with some help, true) that is even BETTER than the wedding cake Big Mom's head chef created
-Zeff pretending to keep food on that barren rock when he actually gave it all to little Sanji, then EATINGNHIS OWN LEG to survive
-Luffy punching a Celestial Dragon
-Zoro slicing through the detached cars of the sea train
-Nami mastering the climatact on the fly to defeat Miss Doublefinger
-Luffy punching Laboon IN THE EYE for being in the way
-Zoro tossing Sendai Kitetsu I to the air at the sword shop, daring the cursed blade to cut him
I could go on and on.

Honestly every Shanks moment is a flex. From laughing off the insults of the mountain goons, asking Marco to join his crew after blasting his Haki on Whitebeard's ship, stopping the Paramount War, Crashing in on the Goresai and having them relent, stopping Greenbull from miles away with just his Haki, to finally destroying Kidd with Roger's attack. Every move of Shanks is a calculated flex atop his previous flex. The only flex I think you missed was Luffy breaking the 4th wall during the filler arc between Skypia and Water 7 while he was literally shadowing behind the Navy guard.

Zoro and Mihawk are my favorite characters the moment I saw what they can actually do. Zoro is strong enough to master three sword style and is a beast with amazing endurance and pain tolerance, while Mihawk keeps calm no matter what and isn't afraid of flexing to show why he's dangerous.
