I learned to speak Jarsey City as a kid. It's just about impossible to write Jarsey City how it sounds without a special alphabet. Take the English word sure. No way to write in English the way that sounds in Jarsey City. Or the English word water. I can say it, but I can't write it. Those early grades in school must be so confusing.

a tip that someone gave me a few months ago was that before you measure honey: put a little drop of neutral oil in the measuring cup before you pour the honey in it In that way the honey won't stick to the sides of the measuring cup and when you pour the measured honey into your mix, every last drop honey will get out: .

My secret ingredient in my jerky is minced garlic. I like it so much more than garlic powder, since it kind of soaks up some of the marinade and dehydrates as well. Soy Sauce, salt, pepper, minced garlic, onion powder, pineapple juice, liquid smoke, ginger. Stuff is magic. Hope this makes it back to Brad

Is the maple syrup really important? I hate maple syrup or the thought that it might turn out slightly sweet. That's why I can't buy over the counter jerky. My dad always made it and he passed away before he handed down his amazing recipe. But it definitely was not sweet.

If you're just making it for say a party or game or such and aren't going to be storing it for months, by all means use well marbled meat. The taste is much better. It will keep for a couple of weeks easy and freezes well.
