I love sushi. Best food in the world. But I cannot think of a more disgusting food to eat - name me a food where the cook is more hands on and literally gripping and grabbing every single piece of your food and mashing it in his hands than Nigiri; and then not even cooking it, too boot At least pizza and things like that where they're touching all the dough and throwing it around, they're cooking it after. Man, I love it, though.

Cody, I produce and play my own music. Your process is exactly similar to putting together a finished track. Start with a raw material, transform that material to a useable form, then construct a piece that completely transcends what you started with. Your precision and detail is astonishing. Thank you for helping me make better music. After all, isn't food, music, brewing, painting, sculpting or any artistic endeavor the same process?

When I went to a sushi-ya in Japan they always put way too much wasabi for me. all I could taste was the wasabi. I would try to ask for less [choto choto], but they'd just smile and give me another piece that burnt my mouth out. I was learning to read kanji whilst I was there, and 'Sushi' was the first public sign I was able to read. got a little excited.

Why is the video called How to Make 12 Types of Sushi with 11 Different Fish? Whats's so special about making 12 out of 11? Why not just How to make 12 Types of Sushi? Just from tuna alone you can simply make 5 types - if you add a bit more variation, you can easily get to more than 12. Interesting video, but that's a weird title to me.

Why eat sushi or poke if you don't like the taste of fish? I watched a actual Japanese chef from Japan explain how when foreign people eat sushi it's funny because they Drown their sushi is shoyu. Why eat items with fish if ya don't like fish?

Does anyone know where this guy is working at the moment? I don't agree with all his cuts but it is a pleasure to observe someone that knows and loves his fish. My reason for asking is that my googling hasn't revealed much. Is he still in Portland?

I wish hed sanitize the knife, board and fish everytime it came into contact with blood or the guts. i dont think its enough to just keep wiping with the same bloody cloth Clean yo fish and yo knife and yo board man

I do not like sushi, I do not like fish that much, I do not like watching cooking stuff, and yet here I am, watching the entirety of this video for some reason. Must be the voice. or maybe the man. :P

you can definitely tell that this guy is good but not great. makes you respect sushi masters so much more when you are given perspective. it's no joke that it takes years of practice
