but this isn't even CLOSE to a carbonara, the point of the ACTUAL dish is the emulsion of pork fat, cheese and eggs and letting those things shine. to each their own but this is barely even cacio e pepe since she added garlic, shallots and parsley. it's just annoying to hear people without proper culinary training teach the masses as though they have a clue. also she definitely overcrowded her mushroom pan; the way she cooked them is just lazy. show people the RIGHT way and if they want to be lazy on their own then so be it.

Do you all use a slate for the sake of the dramatic effect in the video? Or do you actually record the audio source separately from the video source of your footage? Which is what a slate is traditionally used for. Or could it be that your using the slate to keep track of (label) the raw footage while at the same time your using the clapper on the slate for the dramatic effect and/or the fun of it? Why is there a woman lurking all the way in the back? It's creepy. She's back there for the entire video. The second half she's like a cardboard cut-out standing in the back. How freaking creepy Why? What is up with that? Please tell me why there is someone standing motionless all the way in the back for so long? Horror movie makers should take note. CREEPY

It makes me a bit sad that at the end she says it happens to be meatless, because thats not what its about. Im not promoting that okay. perfect, but theres nothing wrong with it. And theres nothing wrong with promoting less meat in our dishes. If anything is a conscious plate. And thats something that should be promoted. No need to add that at the end.

mine turned to scrambled eggs at the last minute: ( left it on heat 2 to stay warm and it cooked. im scooping everything out and leaving the egg pieces at the bottom i hope the rest is cooked or we eating raw eggs for dinner. havent tasted it yet but it looks beautiful thanks molly love u

I'm sorry BA, but I CANNOT abide using orecchiette in a carbonara. Using veggies instead of guanciale? Sure. Casarece and Bucatini are my go-to pastas for this dish. Maybe I just dislike orecchiette for anything other than the ubiquitous sausage and broccolini dish. C'mon, BA.

Thank you, thank you, thank you for making Carbonara correctly Although Im not a fan of mushrooms; Im happy you made the sauce correctly. So many authentic Italian restaurants around where I live make Carbonara with an Alfredo sauce. Like have you been to Italy? I can tell not.

Ewww. that's disgusting she eats the pasta right off of the spatula and then putting it back into the pot to stir. annnnd then she served it to her coworkers. DISGUSTING. in addition, I've eaten all over Italy that's not a carbonara. wth is wrong with her?

People are complaining she put one piece of pasta back in the box, but is no one going to acknowledge that she tastes directly from the wooden spoon. The same spoon she stirs the entire batch of pasta with? Beside that, this recipe looks delicious
