I followed the video recipe, which is slightly different from the written one, and it turned out really good (by the way, why is the written recipe not actually written like a recipe, like with the ingredient list etc? I know it's a short recipe but still. Insane depth of flavor vs chili powder. Thankfully wegman's had some relatively fresh dried peppers from Bailey Farms. I couldn't find pasillas, so I subbed their new mexico chili since per their site it's sometimes known as chile colorado so should be perfect for this I guess, just hotter. Anyway, the only thing that didn't work for me was it took like 4 hours to reduce my chili in a lodge dutch oven, vs the 2hrs it took Rick. I had a decent simmer going, gentle bubbling, and wasn't even on the lowest setting of my gas burner. I guess just be ready for needing extra time to reduce all that liquid from the 8 cups of chicken broth. Honestly it'll be hard to go back to making chili with anything but the fresh dried peppers. I'd love to use this recipe as a base for my more Anglicized chili. you know, with beans: )

Hope everyone is doing well. Hello Rick, in the article(recipe) for this on BA's website you say that mexican rice could be a side dish for this Chili Colorado, is there a recipe for the mexican rice? I did a search for mexican rice on the website and i didnt find anything. Thank you very much for your time. Ive got the pork simmering right now and my chilis steeping so if you could possibly get back to me today that would be amazing, if not i understand. Again thank you for putting this recipe out, the pork and chilis smell absolutely devine and ive only had them on for about 30mins.

First time I've seen Rick do a recipe and I just love him. I was really curious as to what an authentic chile colorado would be like. I figured out years ago that this is not the place for chili powder. I also do from dried soaked chiles. I use ancho, guajillo, and New Mexico (yeah I'm from NM) I will also add a dried chipotle depending on the level of heat I'm after. I always soak in hot water but now will definitely use chicken stock. And ditto with everyone else on the awesome opening

OMG Finally. I stumbled upon this video. the town where I used to live had the best Chile Colorado. I used to eat there just about weekly. then I moved away. and where I am at now. they just don't get it. so I decided to make it myself. thank you Rick. this recipe is the way I remember it. now I have the recipe THANK YOU

Can he stop cooking with nail polish on? It is unhygienic. I remember that as a student nurse, we are not allowed nail polish because it could hide dirt that accumulates under your nail tips. I mean i have nothing against men with nail polish. i just think it is unhygienic when you handle food.

I love every recipe made in the test kitchen but mexican food is the best ever And it's not because I'm mexican hahaha Yum Where I'm from, which is Sonora, we call this 'carne con chile' and it was my grandmother's favorite and she made it so unbelievably delicious

I make a similar recipe, but have never used sage definitely want to try it. I also use my Chile Colorado sauce recipe to make a short cut Mole Rojo, by adding some cocoa powder, peanut butter, and a little sugar and then some precooked shredded chicken breast.

Hey, fellow texans I'm actually not hispanic or latina at all, but I was born and raised in the San Antonio area. This recipe looks so good, and the tribute to your momma made me tear up. I'll definitely be trying it soon
