Growth Hormones are not used in production of chicken, turkey or any kind of poultry whatsoever. Not only these are hella expensive to use in these kinds of farming, the prices would be too high for the final consumer, but they are forbidden methods for poultry growth in most countries around the world, including two of the biggest poultry producers in the world, Brazil and USA. There are governmental agencies that deal with these things, in Brazil there is MAPA (which stands for Ministry of Agriculture, Livestock and Food Supply) or the USA's FDA (Food and Drug Administration. So please, BA, if possible, address this, do not spread misinformation.

It is illegal to use hormones or steroids in poultry actually. So no, your conventional turkey does not have added hormones. The label hormone free is just a good marketing strategy to make you think they've done something special. Also cage-free and free range probably doesn't mean exactly what you think it does. The term pasture raised isn't even regulated, so on it's own that means nothing unless it's accompanied by other regulated labels. Love these videos, but wish people did their research on these things.

Perhaps you could try clarified butter to replace both butter and oil since it has the milk solid removed (which is the main reason butter burn faster) yet retain that nuttiness in term of flavour, really compliments earthiness flavour of the turkey. It would be amazing if you could come up with a brine that has different flavoursome herbs and spices of various origins (since us is multicultural, this would be quite a statement, we are getting political here. Again great show as always

4: 37 It just goes to show how manipulative advertising can be when these professional chefs working for a prominent company in the food industry don't realize that hormones haven't been used in the U. S. for poultry since the 1950's. They were banned and can't be used in any way.

It's so weird. I'm not vegetarian (but I reduced my meat consumption to sausages and sometimes chicken a few times a month, but when I saw the raw bird it freaked me out. I can't stand it to see the animal in the food, so I started to read the comments and just listen to the video.

having cooked hundreds of turkeys with several different methods. here's my suggestion. wet brine. day to dry out. deep fry in peanut oil. (although the smoked turkeys i've made have had AMAZING flavor but taste more like ham than turkey)

This is like actually food science. I learned something by the end of this video that will make me cook food better. It wasn't just Alton Brown acting cute and speaking too fast for 10mins at a time.

God, the 8 person Squad is my favorite thing ever. Its like a team of unlikely superheroes teaming up in a Giant Cross-over. Or like, the friendliest family dinner. The collab I didnt know I needed
