Chef Anthony is absolutely uncompromising in his labor. Super impressive to see how focused and dedicated he is. Also quite interesting that his drive to improve and perfect his product is combined with the fact that he sticks with certain suppliers and tools. Wouldn't those degrade over time

The pizza I had as a kid growing up on L. I. always had the bubble in the crust and when I moved elsewhere in the country, I never found a pizza maker who made the same product as I had as a kid. nice to see the Chef maximizes the crust in his pizza.

In the UK. Papa Johns and Domino’s stores are dying because they put a tiny amount of cheese on the pizza and are always trying to screw you monetarily or ingredients wise. Sometimes LESS isn’t MORE, it’s just why customers don’t use you anymore!

he shows, like Razza, a great pizzaiolo is first a great bread maker. so lucky I live near these great places. Love the dedication to Sicilia with the rest of the menu/ It is scary that some places in the US think Pizza Hut or Dominos make pizza

With 15 employees, he needs to gross $20, 000 that night to be profitable. at $25ea selling 150 pizza. $3750 minus overhead cost and labor he is likely not making much. Thats why he aint driving no Ferrari.

This doesn't look like the #1 pizza anywhere. In the video you can see the cheese slide around on top of the sauce. No one likes soupy pizza.
