Mr. Stanik, the reason why the oven pizzas were flabby or soggy, was that you used the wrong cheese. You may have used Polly-Os whole milk mozzarella. That cheese is like in between fresh and low moisture (like a medium texture) The correct cheese to use is a Whole Milk Low Moisture cheese, (of which Boars Head, and Galbani sell)

this is really disappointing, to be honest. none of the stones or steels got barely any browning on the bottom, so I feel like they weren't hot enough to begin with. also, that steel needs to be WAY thicker.

Should have done the flip for oven, similar concept as the grill, except you take the pizza out to put the toppings on. I personally think this way makes a fantastic pizza, if you dont have a pizza oven

Just buy a pizza stone preheat oven to highest setting(For my oven it's 500degrees F) for 30min -1hr before. Takes 8-10 min to perfectly cook the pizza just as well as those pizza ovens. Trust.

No cornmeal in the dough and no pecorino to finish. no sausage. Your deep dish doesnt even deserve the title casserole. Not even fried onions on top would save it.
