My sister lived & studied in Padua, Italy for over a year (studying the Italian language & eating. Her Italian classmates taught her to make Fettucine Alfredo EXACTLY this way. However, for that much pasta, you need to increase the butter & heavy cream by about 4x to make enough creamy sauce to coat the pasta! Also, they did not add any pasta water or extra salt. A pinch of nutmeg is often used If this dish is too bland for you, that's a preference & it can definitely be tailored to your personal taste. Happy eating, mangia!

But in the US it has become a staple in many restaurants that brand themselves Italian.
In Italy, the dish is most similar to what Italians call pasta burro e parmiggiano (pasta with butter and Parmesan cheese. Italians eat this, but at home
In Italy, this way of making pasta is often referred to as pasta del cornuto - which translates as -cuckold-s pasta-

To this I would add more cream (or maybe milk if I was desperate and ran out of cream) and either super finely chopped onion and garlic OR onion powder and garlic powder, and chopped parsely. It needs to be more saucy.
I like my creamy fettucines to have chicken or prawn usually (and if it is prawn. fry them in garlic, butter and chilli powder first. it does beautiful stuff to the cream sauce. OH AND MUSHROOMS.

I call bs. One, that look BLAND as heck. Two, I'm on YouTube to find an alfredo recipe for my EXTREMELY Roman friend because she's never seen Alfredo in Italy. It's not a thing there, and my other Italian friends don't know it either. Just sayin'.

Just made this and as much as I wanted to like it, it turned out pretty dry. It should have called for more cream and also maybe garlic and more cheese too. It was pretty bland. But I still enjoyed it. Next time I'll make some adjustments: -)

Add lightly wipped cream at the end before serving and just make a fond of Butter, the cheese and pastawater and/ or chicken/ vegetable fond. Gives it more volume, makes it even better. Good recipe though! :)

Geez people. if you like to add some garlic, onion, chicken, bacon, change the cream, etc. just do it, this is her very own version. and better if you make video about it like she does.

I used this recipe for half pound pasta twice and twice the sauce separated in my dish before I finished it. Any idea why?

Saute some garlic. a glass of white wine, a little garlic bread. oh god. I just had a culinary orgasm.
