At Twisted Soul Cookhouse & Pours in Atlanta, Georgia, chef and owner Deborah VanTrece honors the history, traditions, ingredients, and flavors of Soul Food. Yano's: soul food is healthy as long as its cooked with animal fats, if it cooked with corn, peanut, vegetable oil then its not healthy. i grow up in new Orleans in the 70ts everything was cooked in pork fat and beef tallow no one was obese then. animal fats make all foods healthier then their original forms.

So an argentinian condiment with chitlins, and an italian pasta with one or two typical parts of collards. This is just fusion food, no?

Collard greens get a bum rap, they really aren't often bitter. Always, always remove the stem too, just tough and fibrous.
