Barbacoa de Chivo (goat) is so delicious. Not enough goat is eaten in the U. S. Noticed some shots of making enchiladas suizas and it did end up on the table but I guess too boring to feature. Ha. I like it. What an engaging and inspiring chef; delicious looking food. Another excellent Sheldon episode.

How interesting. Both styles of cooking require a great deal of care and respect. Most of the food we eat today is nothing like the true versions, as prepared here. It takes a truly talented chef and staff, to do both and do so well.

I worked in a Roman restaurant, and it was really awesome to see how a lot of the mexican cooks would use the italian ingredients we had on site to execute mexican food from a different angle. Guanciale tacos are A+.

Great episode and awesome looking food. One suggestion, on the food montage slow down the subtitles and simplify the editing. It was very hard to read and look at the food of the same time that quickly.
