While I'm not a night owl, some of the best meals I've had have been at the most odd hours. There is something magical about eating things at an unusual time, in an unusual place, even if it's familiar. (I may have had a LOT of late-for-me sukiyaki runs in college. I miss those)

This chef looks Chinese, and his Japanese language have very strong Chinese accent. Nihon kara kuru dakara Because it's come from Japan --> wrong. The correct Japanese is Nihon kara kuru kara --Because it comes from Japan. Typical Chipanese. But his sushi looks good.

I love these videos but I wish Eater would start another series on different cuisines, and I don't mean just checking out their restaurants and cheap eats. There're so many amazing cuisines out there but they're all considered cheap ethnic food which sucks.

I am going to try to get in for their late night omakase seating when I'm in NY in April. My hotel is 3 blocks from them, but only 5 seats and no reservations taken. still, though. gotta try.

too much exaggeration. 2 years to learn cooking rice? cmon man its just rice not a building! in some other vid one chef was saying it takes 3 years to learn to skewer! i m like stfu!

My favorite part of the video is how he puts his own twist on the sushi to satisfy the pallets of his customers, but still keeping the form of sushi and how it should be.
