I literally just watched Grant Achatz' Chef's Table episode. Does the team at Alinea use gelatin? Aren't there certain ways you can cook sugar to get the same gelatinous effect. Like Turkish Delight.

Does it not bother him that he is not doing it anything like the pros are? He has the hose pointing up while they have it down. He's not even trying the right technique.
