That's not a gamey flavor, it lanolin, wool breeds produce lanolin and it is part of their carcass. I doubt the carcass shown is a true lamb given its size. The asian guy said lambs are only grass fed, not true after they are weaned most lambs go to a feedlot and eat a corn based diet to grow them out. If you want a true grass fed lamb then you will be looking at a 90-115 lb recently weaned animal. If you are put off by the lanolin after taste look for a hair based breed like a Katahdin, Barbados, or dorper breed to get a milder flavor

i live in south carolina. low country. we do vinegar. and i want to say there are 3 whole hog places within 3 hours of my house. i have no idea what this guy is talking about when he keeps bringing up NC. he mixed a western/midlands sc sauce (mustard) and an eastern/low country SC sauce (vinegar, and then called it a NC sauce. dude was close but missed a state.

That is not Lamb. a lamb is the young sheep, this is probably a full grown Ram. what gives sheep the flavor people don't like is when a lamb reaches puberty different hormones start to be produced by the lamb which give it the Mutton (whool) flavor no one likes, so it has to be slaughtered before it reaches puberty.

The best way to test this theory is to bbq a lamb, a goat, and a hog on the same grill with same prep. Invite 100 of your friends over for bbq and beer and serve all three. Then explain why some of the lamb was left and most of the goat was untouched and all the guest complained about the pork ran out.

Biriyani - This is not an Indian dish and it's not a Thai dish, it's definitely an American dish. Pasta - This is not an Italian dish and it's not a middle eastern dish, it's definitely a Chinese dish.

The reason for the gamey taste is because you need to remove the gpands in the hams of the hind legs and 'armpits' of the front legs. Improves the flavour and gets rid of the strong game smell.
