It's sad that 90% Americans never had proper authentic Chinese cuisine. They've had more Indian, Japanese, and Thai cuisine but China has the most vast variety of cuisines. The only thing most Americans can think of is egg drop soup, wonton, and general tso chicken. None of those American Chinese food are authentic. Authentic Chinese food is about fresh ingredients paired with all kinds of herbs, spices, and properly seasoned or marinaded meats to create very strong flavors, good texture and color.

I actually tried this place in Manhattan on my last visit to NYC because of this video. I tried this noodle dish and it was amazing. That said, my favourite was the cold noodle vegan dish. It was superb. I'd definitely recommend this restaurant. The location I went to was quite small and cramped. Go earlier to get a bit more space or you'll be waiting for seats. Also, don't wear white. It was a bit messy, but that's probably because I'm a clutz. Delicious.

If a restaurant were to be fully authentic, then theres no reason to eat there. Its gonna be like any other restaurant in China. The greatest restaurants in the world right now are the ones that innovate. Also compared to the other Chinese restaurants you find in the US, Xian Famous Foods is already extremely authentic.

3: 40 some people ask for chicken wings. Something native Angelenos(LA) know nothing about. I've lived in LA for almost three years, and the food here is TRASH compared to the NYC or general tri-state area(Connecticut has more options lol. The weather is INCREDIBLE though, 9 months without rain is amazing.

He inherited his Dads business. He didnt want it until he realized that he left to pursue something else and it didnt work out. He didnt realize what he had at that time. He is Americanized. I know because I did the same thing. Spoiled at a young age. Great Parents do know best.

Were I live theres a small resturant in a narrow building that serves up these same dishes but the chunks of lamb they put in the soup with wide noodles and bockhoy are super marinades in cumin and other spices to the point it turns a reddish hue and it taste so damn good.

that guy never farmed for one dayXi'An is the twilight region of animal farm and plantationback in the middle ages china, slaughter of ox/beef was illegal, pork is consider a lower class, chicken are raised for eggs, only lamb is universally enjoyed and cherished

2: 55 is seriously a dumb ass question. Of course its competitive! Way more competitive than a boring pizza place. Maybe have interviewers who are asian or have some kind of sense of the restaurant industry next time?

Man it's crazy, these guys are selling handmade, made to order noodles for 7 using quality ingredients. If you go to an Italian place that sells pasta they will easily charge you 15-25 for that kind of time and effort.

goddamn i know this guy. he used to help his dad run a little hole in the wall noodle shop in main street down in a basement kind of thing. I gotta go back to NY and check out his place, i miss his food.
