This is the kind of boss you want to work under, you can tell how much knowledge he has. That man is brilliant. Most people probably dont work in a kitchen so they dont understand the labor and finesse it takes to make bread let alone baguettes

I used to frequent a French bakery in NYC many years ago. This reminds me of how much I miss those breads and pastries. I doubt if it is still there, but I'm sure there are others.
