Lazy. Make a genuine broth out of soup bones. Use cartiledge heavy parts like oxtails and knuckles and kneck bones. If using beef. If using pork use bones and add skin to make it gelatin.

omg this is awful. it's like this guy did absolutely no research when he made this dumpling and just made assumptions every step of the way. That meat looks tough as crap.

Would've been better if you cut the jellied broth in much smaller cubes and properly mixed it into the filling; better distribution and keeps filling juicy.

The chef I used to work with would come back and haunt me if I made this with gelatin. Proper bone broth will do the same, also taste way better.
