DIY Soft Serve Ice Cream Recipe! Homemade No Machine Ice Cream WITHOUT Sweetened Condensed Milk! Showing you 2 flavors today, chocolate and vanilla. 3 NEW Soft Serve Flavors: Soft Serve Ice Cream Recipe in grams and cups: 700 gr Heavy Cream ( 3 cups) 400 gr Sugar (2 cups) 2 tsp Vanilla Extract 3/4 tsp Salt ( Do not skip the salt, it cuts the sweetness of the ice cream) divide mixture in half and to one half add: 40 gr Cocoa Powder (1/3 cup) NOTE: Your ice cream base must be chilled in the fridge and very cold before whipping it, otherwise it won't whip up. For the people who are having trouble whipping up the cream, you can still freeze it as is. It just won't be as pipeable, but it will still be creamy and delicious! :) Use a sturdy piping bag. Great video. Glad to see you acknowledge the chemistry that goes in to this. Mom's for generations are Scientists, just I said years ago. 1 thing I do is chill a stainless steel bowl and the mixer paddles in the freezer for a bit before ever whipping cream, it helps solidify the cream thoroughly as there is not your warm environment working against you. Any kinetic energy, such as the mixer paddles rotating, creates heat which is counter productive. Instead of salt which conflicts with the cream, try cornstarch it will not add flavour and thin out the sugar influence. Thus you will taste more of the natural creamy flavours.

Hi Emma, I make ice cream alll the time. You do not have to put so much sugar. You can reduce the sugar BUT you must omit the salt and replace it with the same amount of baking soda, YEP, I said it. The baking soda acts as alcohol and lowers the freezing point of the ice cream resulting in soft creamy ice cream.

Hello, I'm type 2 diabetic and I want to know if I can use a sugar substitute like erythritol or maltitol, to make this type of ice cream. They can be substituted equally to sugar 1: 1. Will the ice cream be as soft as yours with these types of sugars? thanks a lot

Is there any way I can substitute the heavy cream or does it HAVE to be heavy cream, I really wanna try this in quarantine but the supermarkets r all out of stock: /

_The best i could do after putting the icecream in the fridge is, grabbing my glass and scoop and enjoying my icecream while watching kdrama during this quarantine_

It was good but still nothing to compare to real ice cream. Reminded me of very sweetened and flavored whipped cream that was put in the freezer.
