Hey, Chef John:
I've been trying to make a green bean casserole from scratch, and it keeps ending up greasy. The first time, I put some butter in the pan before sauteing the red onion, then added pancetta and garlic, and added flour to make a roux. Then remembered the mushrooms; they sauteed well enough. The end result was very greasy, and a tad over salted, so this time I decided to start with pancetta, and use that salt and oil to cook the onions (and this time shallots, as well. The flavor was not as good, and a tad undersalted this time, but still very greasy, though less so. Should I ditch the pancetta? Use less onions?

OK - this looks like a wonderful recipe. But my wife is making a turkey pot pie for dinner tonight, which will be different enough from the tryptophan coma from yesterday to still be a treat. (She makes a REALLY good crust with celery seeds, and I am looking forward to dinner tonight, despite eating an unhealthy amount of feast yesterday) But if we STILL have more leftovers, this dish will be on the menu in a day or two. And indeed, I am a fan of the dark meat from turkey or chicken. Thanks, and thumbs up.

Chef john, nice leftover recipe, in the dry mix, i would add a teaspoon of poultry seasoning, it really gives the soup some pop. delicious
