
Red White & Blue Cheese Balls - Pepper, Corn, & Blue Cheese Poppers

Edit: If you're celebrating Mexican Independence Day, you can sub out the blue cheese for cotija (or leave out the extra cheese entirely, since the corn is already white, but cotija goes great with corn) and throw in some green herbs or peppers to make them red, white, and green. I hate cilantro, but for 90% of the population that seems like the obvious choice. Either way, the end result is something that evokes the flavor of corn salsa, which is the best salsa. You can obviously adapt this recipe for pretty much any country's flag, but the roasted peppers and corn struck me as being particularly inspired by Mexican cuisine.

First, you have confirmed my way of cutting corn off the cob. I have a torch, but I usually still just set the pepper on the gas burner. Dang, dang, dang! This looks like a great food to try! Thanks, Chef! Nice and cold and firm as a description brought something non food related to mind, but I promise it was a good thought!

My Mom always told me to never use water to help wash the charred skin off of roasted red peppers, just let them cool down and use your fingers to remove it and the seeds. Apparently if you use water you wash/flush away a lot of the sweet sugars gained by the charring process. Anyone know if this is true?

Chef John, I saw in a Japanese steak video a side condiment made using black peppercorns, salt, and olive oil. They grinded these ingredients and made a paste. I believe they called it Cambodian Pepper Paste or something. Have you tried something like that Sir?

I'd love to make these for a treat around Christmas, but I'd be using frozen corn if I did. Would that hurt the flavor? Is it a bad fit for a cold winter holiday? Thoughts?

Fresh sweet corn takes me back to my childhood- growing up my parents would always get sweet corn from this local stand every summer and it was fantastic.
