I have a sad story to tell about the recent heat dome over Canada. I was burning up and decided to walk by a stream coming up from the ocean. And suddenly a salmon jumped out of the river and into my arms.
He was quite warm to the touch, much too warm compared to the other salmon that have jumped into my arms in years past.
And he said, climate change did this to me. I'm dying. But please, take me to a fish monger near Chef John since I want to at least go out a You Tube star.
And so I did.

I love how you said the salsa was now technically homemade. I doctored up some salsa and told people at the party I made it. I've felt slightly guilty every since. I now feel better knowing I'm not the only one that thinks that way

The nachos need to be warmed up tho, anything corn based just tastes better warmed up. Maybe bake them along the fish for a few minutes.

When it comes to cooking fish my motto is when it comes out of the water onto the boat it is done. Anything after that one must do very lightly.
