I tried this one like two years ago, but had insufficient people to eat it. Put the excess in a freezer bag packed flat and froze. A couple weeks ago found it at the bottom of the freezer. Couldn't remember what it was, so got it out, broke up the block into chunks, threw into a pot, hoped for the best. It was as delicious two years later as day one. I couldn't remember what it was, so we tried it with rice, pasta, toast, swiss, parm, cheddar, even egg noodles and sour cream for a kind of goulashish thing. Always delicious. I think you could put this stuff on wood shavings and it would still be good.

There is LOTS of related onion allergies where a symptom of it is slightly upset stomach to full on gut rot- belching up gas that could kill a maggot. Its scientific proof, an onion turns poisonous within 24 hrs of being cut into. It doesnt affect some people. Ever get sick on potato salad at a bbq where the salad sat out? It wasnt the mayo or eggs- it was the onions. I can only eat them if its whole and just been cut. I cant eat left overs with onions and if I dont use the whole onion it goes in the trash (or composter. Be smart people This info is out there.

this is a job for the instant pot. so long as i can slow cook without the lid. although there is a button you can ppush down to pretend youve put the lid on so maybe some sticky tape would keep it on for 8 hours lid off. defo gonna try this. when i cook a chicken in the instant pot i put a ton of onions on the bottom and it makes hte most amazing soup. never thought of reducing it into a sauce. you could even throw your pasta in at the end to the instant pot and cook it in the juices. omg. yeah.

We just ate this. Had to use Penne because they dont make gluten free rigatoni around here (celiac family) and I did not want to make my own pasta today but my GOD THIS WAS SO SO SO SO GOOD 20 stars. Easy. The toddler ate 3 bowls. a miracle. ha Your recipe beats all the other ones I checked out, too. Even from the actual Italians living and speaking Italian. Thank you I may have to make a super huge batch of this and pressure can it.

Of all the recipes of Chef Johns I have tried, this was my least favourite. It turned out way too sweet for my liking even though I did use sweet onions. Also, being winter, the whole house smelled like this sauce as it cooked uncover for so long. Open your windows. Last, the texture is not so pleasant as it felt like a mushy mess. Not a success, in this case.

I made this and it was great. But, as my car is in the shop, I had to make do with what I had. Spinach, red kidney beans (are there any other kind but red. plain pork sausage that I miraculously turned into Italian sausage and last but not least, canned generic parmesan. You do what you have to do. I would not consider my pantry well stocked.

Well, not everything Chef John makes is a winner. I made this dish following the recipe (except for the fact I substituted sirloin for chuck roast) The end result was a dish overpowered by the flavor of onion. I love onions, but this was over the top. And yes, I cooked it all day until the beef and onions mostly melted into a soupy mass.

HistoryGenovese sauce is a rich, onion-based pasta sauce from the region of Campania, Italy. Likely introduced to Naples from the northern Italian city of Genoa during the Renaissance, it has since become famous in Campania and forgotten elsewhere. The sauce is unusual for the long preparation time used to soften and flavor.

I just tried making this dish and the meat burned on the first 30 min cook. He looks like he had about the same amount of liquid I did from the wine, and my temp was set to medium. Yet still scorched. I was thinking of trying again next weekend but adding in stock before I do. Anyone else have an issue?
