I used to use your cut in half potato method but I started steaming my potatoes (evenly cut chunks). Technically you can't overcook them into mush but you can still scorch them if you run out of water in the steamer, so don't do that or they won't be edible, trust me.
All that butter is ok I guess if you have no homemade gravy but for me it's all about the gravy.

I know what I'm bout to say is going to probably make chef John mad but I make my mash potatoes from the powder stuff and when I'm finished the taste and looked as if I used fresh potatoes lol no one has ever been able to tell the difference.

You don't make things to impress other people. You make them to impress yourself, and of course other people! That's me every Thanksgiving. I do everything from scratch, only thing canned I use is crunchy onions. Because they are awesome!

I totally agree with the 3: 1 butter ratio I used to love buttered mashed potatoes back when I was able to digest dairy but now only at the age of 30 I can t digest butter or any dairy product what alternative would y all suggest?

To this day, I'll still break out the old school Chef John succotash and cranberry sauce (with some slight modifications) for any number of Autumn/Winter holiday meals.

I sxrub my taters with very warm soapy water, especially when we eat the skins. So I do it even when I, rarely, peel them. Heck I do that with apples too
