I ve always been fascinated with the idea of using croissants as a base to other recipes. I ve seen them made into crispy cookies, hand-held cheesecakes, and fabulous looking bread puddings, but as far as I know, this might be the first time they ve ever been used for mini pecan pies

Will this still work okay with the fresh croissants that are a little lighter in color (yellow instead of golden brown) and flatter, like the ones that grocery store bakeries or Costco usually have?
Also, if I want to bring these to a holiday gathering, when should I make them? How well do they keep? Is this a morning of thing, or would day before be okay?

I somehow knew right when you started talking about the bottom texture that you were gonna say baklava. Omg, I can only imagine! Ive been on a baklava kick after our local discount grocery had the most amazing ones in stocl recently. From squares to rolls to weird nests - I cant stay off it!

Sorry to keep chiming in, but if you're only making six, which in my world means desert for one, wouldn't it just be quicker to lick the top of the muffin pan clean before popping it in the oven? I mean, why involve fingers, when you can just get right to it?

I am an American expat living in SW France. I will be hosting Thanksgiving and I think I will be adding these to the dessert table! I can get some great croissants at my local boulangerie!

Woah. In the beginning, I assumed chef John was going to use croissant dough from a can. Caught me off guard when he whipped out already baked croissants.

I love a good pecan pie, and this is looking like a great way to make some smaller ones I can share at a family holiday dinner.

I wonder if this would still work with day-old croissants. I can get those for cheap from the bakery at the end of the day.

Believe it or not; when I couldn t find Baklava at one occasion, I decided to buy pecan/maple Danish pastries instead.
