Made this today for myself and my girlfriend with raspberry chocolate, and it was phenomenal. Sadly I didn't have ceramic ramekins just lying around, so I had to use glass. However, it turned out delicious nonetheless. Just didn't rise quite as high. But still, utterly perfect. Thanks for another amazing recipe.

Why does Chef John use a roux for the chocolate base? I thought a roux was supposed to a thickener for sauces, etc. and a souffle is supposed to be light and airy. Wouldn't a roux work against the whipped egg whites in terms of texture?

What chocolate delivery systems do you prefer? Fedex, UPS, Cruise Missile? I personally prefer the Ballistic for my ldr as it cuts out the middle man, but still has that big impact of a Cruise.

I have made this many times but with Bruno Albouze's recipe. A nice addition is a few drops of vanilla extract. I LOVE Chef John but that cayenne in this made me cringe.

could you taste the cayenne? let me guess before you give a rim job you sprinkle in some cayenne over the assholei can taste ass but that cayenne really brings it to life

2 questions: The butter can be browned before add the flour? And can you explain the difference of Belgian cocoa powder and other types(or there's blog post for this one?
