Learn how to make a Chocolate Yule Log (aka Buche de Noel) This classic holiday dessert is a real showstopper, but its often better looking than it is tasting, which is not the case with this, thanks to a rich chocolate sponge cake and mocha buttercream filling

Recipe for Chocolate Yule Log: Buttercream Frosting: Powdered SugarButterCocoa Powder (High-quality and unsweetened)SaltCoffee LiqueurWhip in mixer at high speed till very light and fluffy. Works better if butter is soft. Add spoon of mascarpone cheese (Optional)Chocolate Sponge Cake: Brush a little bit of melted butter on baking pan to stick baking sheet to pan (Optional)Line baking sheet with parchment paper and brush generously with melted butterTake bowl and add dry ingredients: Cocoa PowderSaltAll-purpose flourMixSift (Optional)Take bowl and add wet ingredients: Five large eggs (Room temperature do not use cold eggs: Very important)SugarWhip in mixer at high speed till very pale, very thick, and very fluffy (Use electric mixer if possible)Add half of dry ingredient mix and vanilla extract in mixer on low setting just until it starts to mix in. Stop and add the rest. Start on low for a few seconds before starting on high for a few more seconds. Finish mixing by hand. Once it sets pour it on baking sheet. Use spatula to spread it. Leave a little space on either end (Optional)Knock out the pockets of air in batter. Transfer into center of a 400 degrees oven for 8-10 minutes. While it is baking take a kitchen towel and dust with powdered sugar. (Or cocoa)Dust cake with powdered sugar. (Or cocoa)Flip cake onto kitchen towel were the powdered sugar/cocoa is. Peel off parchment paper. Give bottom of cake another dusting of sugar. Very gently roll cake up in towel. Leave wrapped up to cool for 15 minutes. Unroll cake. Take spoonfuls of filling and then spread them over cake. Roll cake up (Not with towel but if you need to use to towel to start it then use it partly and don't press down too hard)Dust a small amount of sugar on the topWrap in plastic. Refrigerate for two hours. Chocolate Ganache: Add dark chocolate chips and hot boiling cream poured over itLet sit for a minute before stirring it togetherContinue Chocolate Sponge Cake: Take first cake layer and cut off ends to clean it upCut an angled three inch piece off of it then use buttercream to stick it on side to look like another branch on logCover log in Chocolate GanachePut in fridge for 15-20 minutesTake out and use knife to give the texture of barkRefrigerate until completely chilledTransfer to serving platter or piece of marbleDust top with a little bit of cocoa and powdered sugarAdd gingerbread dirt and meringue mushrooms around it (Optional)Add rosemary sprigs here and there

This was the first time I ever made a rolled cake so I was nervous it was going to crack, but it didnt I think the key is spreading lots of butter on the pan, not over baking the cake and rolling it with in a couple minutes after taking out of the oven. I made it for a family Christmas party and it was a success They loved the cake and it looks like an actual log. They said it was too pretty to cut into lol. I also didnt spread as much butter cream on the cake like you said, so the ratio of cream to cake was perfect I did have some left over ganache but I used it to make truffles cx Thanks so much for the recipe

This is so perfect for the cake technique & the ganache frosting I havent seen a better video anywhere, and I looked (Made mine the year before this vid came out) I used a cherry/whipping cream filling (I rly dont like buttercream) for a black forest flavor, then I decorated with more cherries (the dark ones with stems from TJ) and since I have no time at Christmas for meringue mushrooms (tho they do look like fun) I used a bunch of Japanese candy chocarooms (sp) And more whipped cream on the side. Gorgeous Ill try this technique & recipe next time for sure.

I recall making this for French class in Highschool Bought an easy chocolate cake mix and marshmello cream icing. I also melted some hersheys into a wax sheet into a thin layer and broke it up as Bark to decorate the outside later, sprinkled with powdered sugar at the end. We used our school ipads to record the making for a grade, too bad i didnt think to send the recording to my own devices: -(

I made this Yule Log for our Christmas Eve family party last month and holy goodness was it delicious It looks very complicated but was actually very simple to make with your step-by-step instructions. I left out the coffee since I don't like mocha flavored things and it was still so good My family raved about it. Looks like I'll have to make it a tradition each Christmas. Thanks for sharing

Made this today. The chocolate sponge cake was soft, slightly sweet and never cracked I chose to fill my Yule Log with vanilla stabilized whipped cream instead of buttercream. I did cover the outside with ganache like Chef John except I made mine with 1 part cream to 2 parts chocolate. DELICIOUS I'm keeping this chocolate sponge recipe. Thank you

This is a question off topic from this video. I want to bake salmon for Christmas day. I'd be baking about 10 individual pieces of salmon for all the people in my family. How long and at what temperature should I bake all that salmon in the oven?

I make a lighter colored buttercream for the cut ends of the log and branch so it looks more like a cut tree. I also take some of the light colored buttercream and add green food coloring and decorate the log with ivy vines and leaves.

Wonderful I love your recipes and the way you do your videos Any chance you could do Christmas pudding? I want to make it fairly traditional, BUT with butter instead of suet. My husband it asking, and LOVES hard sauce.
