I've done something similar to this several times for Easter, but I marinated the lamb in olive oil and Balsamic vinegar with a tiny bit of brown sugar, and rubbed it with salt, pepper, and rosemary. The results were a lot like the results in this video. But now I want to try it with the Central-American flavors.

I am a Brit, and almost probably in a minority, but I think those spicy flavors would spoil the delicate lamb for me. Sorry Chef, I have loved almost all on your other zillion recipes.

Great idea, but who in the ever-loving Christ can afford a leg of lamb nowadays. This isn't a protein that your average person is going to have access to, unless they're on EBT.

Yeah spring! Spring is starting early in Ohio this year. Made red wine braised leg of lamb with carrots, peas, and fresh mint last weekend. Amazing! Lamb is such a great meat.

That is 100% true.
If I asked someone how they injured their wrist and the answer was Stabbing lamb, I would either not believe them or ask some vert leading questions.

I got in to cooking bit. but even for those two days the amount of spices and salt for what looks like pretty huge chunk of meat is sinfully inadequate.

Needed this four days ago. Found a small version of this lamb at the market. Did my regular roast but this looks so much better. Next time!

I am curious. you say you are using kosher salt but the salt you use in the video looks like table salt. Am I missing something

I love lamb roasted with salt salt, pepper and garlic, but this spice marinade sounds yummy. I will definitely give this a try soon. :)
