In the small town in Minnesota where I went to HS, kolaches were a big thing. But not in the bakery where I worked after school, Only in the competition's bakery, where I think they had a Polish baker. And as far as I remember they only had the sweet ones, usually filled with prunes or something else dark that I didn't fancy. But savory sounds very appealing, and these look easy enough for me to try making them!

hmm, I always thought that kalach is a wheat bread of a small- medium size (one meal) and round form. If you were making your kalach with jam, fruits or cheese, I'd call it a vatrushka. What you mentioned kalach with a savoury filling in my book is called a pirozhok, thought it can be with any imaginable filling.

Doughs that have butter in them are very very pleasurable to work with - ooh yeah but getting the butter in is the tricky part. Such a pain in the neck without a stand mixer, especially on my small countertop. It's the number 1 reason I got myself a stand mixer off craigslist.

My mother was Iowa Czech; Czech was what was spoken in home until she went to grammar school. She made kolaches all the time, as did every other self-respecting Iowa Czech (there were always dozens in the freezer. Anyway - Kolache has a soft- e; It DOES NOT rhyme with cheese.

According to many sources and a few Czech/Texan friends, a kolache is sweet. Savory kolaches are called klobasnek. But I freely admit that most Texans like me (a native Texan) call anything that looks more or less like a kolache a kolache. Cheers!

My Czech mother always complained about American flour when she visited us in US. Czech flour is coarser, has more gluten - something like that, I am not sure. Ennis near Dallas has lots of Czech people - there should be some kolace on sale there.

Oh Chef John, you need to get out and about more. Oklahoma has a couple of large Czech community where kolaches have been made and enjoyed for decades. In fact, it's common knowledge the Oklahoma Czechs sent the kolache recipe to Texas. Just sayin

Chef John will hate it with his whole anti-veggie stuff but throwing it out there. Works great with diced mushrooms/onions & a roux made with vegetable broth. Small parcels so adding more vegetables can quickly overload the Kolache.

My bestie (Eastern European descent) used to make several varieties of kolaches during holidays. She can't anymore due to health issues but I'll tell her about this and maybe I can try it and bring them over to her!

Chef John you should come to Alabama, we have fantastic Kolache s here! I grew up in them and you can get them at any DFM (aka any gas station, at least up where I live in the northwest corner area.

I was thinking that it looked great, then you put an egg on top and cut into it and I realized my mouth was actually hanging open. I wasn't drooling, but it was close. Brilliant idea. Thank you.

Some of the best Kolaches I've ever had were at a place in New Iberia LA. I think it was called Meche's. They also had fantastic doughnuts, but the boudin kolaches were incredible

You can get kolaches in other states. I know a certain grandma who lived no where near Texas who considered them to be a staple and made them in large batches.

Kolaches are Boheima, which is now Czech in origin. my aunt made the sweet version. They are available throughout Wisconsin with a lot of Bohemia immigrants

This is a good version. But i make another version of sausage gravy, I leave the onion and cream cheese out, and add scrambled eggs to it. Family loves it.
