Yakamein New Orleans Style Noodle Soup

This is my take on Yakamein, which is famous in New Orleans, but for whatever reason, not that well known outside of Louisiana. Besides being a comforting and delicious thing to eat, this easy to make soup is a famously effective hangover cure, which explains its nickname, Old Sober. foodwishes Not sure how to put in a request?
Could you pretty please re vist Pho. I saw the fake pho video from 3 years ago.
I have questions about the bones(washing them, charring them) I have questions about when to put in aromatics(You put them in the beginning, others put them in last hour)
(Pressure cooker vs 8-10 hour simmer skimming scum)
(Msg or Pho cube)
(Not sure if you toasted your aromatics)
(Rock sugar)
I love this soup, i know it is a long process, if possible could you do 1 or 2 videos to do this soup justice!

I like to add Cajun seasoning, Chinese five spice, fish sauce and Tiger hot sauce to the broth, and I prefer to use tri-tip roast cut into strips instead of the chunks of Chuck, as I think that produces a better texture. Also I prefer a soft boiled or poached egg to the hard boiled because the runny yolk adds just a little extra richness to the broth that is really quite delightful.

I never heard spaghetti called noodles or used as noodles. I don't mind but just wondering if you used rice noodles or another type of noodle would it make much of a difference? And, I'm glad CJ mentioned chicken as a sub because I was planning on making chicken soup tomorrow but need a couple of the other ingredients so def. will try this soon.

In the mid-Atlantic, the African American community has a dish called Yock, which is very similar. It's spaghetti with a thin tomato sauce with pork and or chicken, raw onions and a hard boiled egg. The seasoning of the sauce is usually a secret family recipe. The sauce is cooked separately and added to the bowl after the other ingredients.

Street yakisoba -- the primary inspiration for this dish -- is reason enough to visit Japan. Used to gorge myself on it after a night in the bars when I was stationed there back in the 1980s. It's the Japanese equivalent of an Ultimate Cheeseburger and curly fries at 0230 in the morning.

It's a New Orleans adaptation of Yat Gaw Mein, Cantonese for Noodles for one person. It's simply a big bowl of noodles, meat or seafood, and veggies in broth.

New Orleanian here: This is a tasty soup you mostly find at corner store deli's and Chinese restaurants in the hood. Do not ask for it at Commander's Palace.

I m only commenting because this soup is featured in S5 of The Expanse. Maybe one day I ll get to the Big Easy, but I d rather be in the asteroid belt.

Better than bouillon is a life saver. Gourmet? Yeah, no. not gonna replace home made stock/broth. But a perfectly acceptable alternative on a busy day.

In Norfolk VA. It's is Chinese noodles with chicken broth one big chicken wing and a hard boiled egg last but not least ketchup.

Yes to all of this, but for me that egg needs to be cooked about half as much. I love a good runny egg in any noodle dish. Thanks, Chef John!

bovril (the paste in a jar) _from the UK_ is better than BTB.
accept no substitutes (unless you have to. then BTB will have to do, won't it)

Plain, simple spaghetti? Poor choice, there are so many better noodles to pair with this soup. All that effort, then blah spaghetti?

So I'm from the Hampton Roads area of Virginia and they make this dish completely different. I remember it having a tomato based sauce.

I m sorry did you use Mexican hot sauce for a Louisiana soup? I prefer the taste on the Mexican style, but that feels just wrong.

I've always found ramen noodles to be the ultimate hangover medication. It makes sense that this dish would work as well. Thanks!
