My mother made this a couple of times a year.
It was called a gramcracker refrigerator cake.
Heavy whipping cream, sugar, coco
powder
Mix until it's the same as your was. On a platter put a layer of
gramcrackers a layer of whipped cream gramcrackers whipped cream ect. Add sprinkles on top layer of whipped cream. Cover and refrigerate at least 24 hours so the gramcrackers soften up.
Enjoy!

I find instant or stovetop pudding with a packet of bloomed gelatin mixed in makes for an easy icebox cake creamy filling, and graham crackers are a reasonable replacement for the cookies. Using butterscotch pudding and cinnamon graham crackers in particular works very well. It's just too bad the chocolate graham crackers have vanished from store shelves.

Chef John, ever hear of a Jello Refrigerator Cake My mom made them for me for my birthday in the hot northern Calfiornia summers. Make a Lemon pound cake poke it full of holes, then pour hot lime jello over the top and put it in the refer to chill/firm. Then ice. Serve cold with ice cream!

YUM! Will definitely be trying this. My current favourite dessert is one my mom has been making my whole life, which is basically this recipe except with ginger snaps, then layers of sliced banana and layers of whipped cream. But mocha is one of my favourite flavours. Thanks Chef!

My mom made a cake like this by standing graham crackers up in chocolate whipped cream in a long rectangle and then cut it diagonally so each slice was layered. It didn’t occur to me you could do this with any flavor, cookies or shape. Fridge cake yum! Im making a lemon one!

You have given me an idea. My husband wants me to do something with ginger snaps. I have spent all summer trying to perfect a peach custard to make peach pudding with ginger snaps. He is not a cake person, but he may love this with ginger snaps.

Used to make this all the time. They sold Icebox Cookies at the store that were rectangular but were basically Oreo cookies without the cream. Now you can buy 6 Oreo rounds to make ice cream sandwiches, but it works perfectly for this recipe.

Instead of putting whole cookies for the layers how about roughly break them up with a food processor Just kinda chunked, not powderised like you would for a cheese cake base Like you would process say gram crackers.

Icebox cake is my favorite! Thanks for the recipe. The cookies I used to use to make this cake are no longer available- I am going to try it with another brand. That mocha icebox cake looks delicious!

Possible option for a fancy presentation: Instead of filling between the whole cookies on top with pieces, wait until ready to serve and fill in the spaces with berries.
