This churrasco chicken, marinated in a beautiful garlic, chili, and herb paste, and grilled to absolute perfection, is some of the most juicy and flavorful chicken you will ever have. Serve with lemon wedges, yes, or chimichurri sauce, but the very best way to serve it is over our Chimichurri Potato Salad.

Lived in Brazil for years. The only seasoning for grilling meat is salt. Definitely no chilis. No marinade. Have been to many Brazilian BBQ places and never seen anything resembling what you made. When it comes to chicken they're mostly just into chicken hearts.
That said, I wish Brazilians knew how to make food with interesting flavours. But alas.

If your from Australia, 8 thighs can mean tiny or very large. I brought 5 and it was 1. 2kg I have brought many more that have weighed less. Also you saying you have made this many times, this is your first time making this. But its great your making us feel like you have made it many many times before.

I’m always weary of chicken thighs at restaurants because I’ve too often gotten gristly ones that just ruined the dish. And I get so finicky about trimming meat at home that I might end up losing 1/2 of each thigh. ;-)

Looks very tasty! But the seasoning doesnt sound very brazilian. We dont usually use chili pepper or paprika. And we usually just chop the garlic and season the meat without grinding the seasonings as far I as know
reply

Okay I never understood this.
If you put it in the fridge in the evening to allow for an overnight marinade, 14 hours later means you made this for breakfast!
Shouldn't overnight mean close to 20 hours

I had BBQ chicken tonight, 15 minutes before this dropped. :) Although I BBQ'd the whole thing, vertically, in a Big Green Egg, with a sumac, oregano, cumin, garlic & salt rub. Still. synchronicity. :D

Whether chicken, beef, or some other meat, you are after all the Pope Francisco of the churrasco (sorry, cannot think of any rhyme with Leo the Fourteenth; may he spiritually lead well though.

Not sure if it's a good idea to mix the acids (lemon juice) into the marble mortar. Acids will dissolve the calcium carbonate of the stone and that will end up in your food. Careful with that!

Any changes you'd recommend making for a griddle instead of a grill
Also, side/sauce combo should be accoutrement, because it makes us peasants sound like we know what we're doing

Fyi, brazillians produce the rr sound, or the r at the beginning of a word, as more of an H sound for english speakers. So churrasco would be pronounced similarly to chu-hah-sko

I'm thinking this dish would be great sliced up and served with lettuce, tomato, onion and some sauce on tortillas. But the potato salad would also work.

I don't have a bbq. I wish I did. I also wish I didn't live in a tiny apartment on the second floor but, there it is. So, can this recipe be done in an oven

Looks amazing!
If you don't have a grill available, what would be your recommendations for oven temps, settings and time Or is it better to pan fry

Chef John! I ALSO own an Expert Grill! Yours remains in MINT condition; mine is a little battle-weary - but does a GREAT JOB still. WELL DONE!

John this chicken looks absolutely phenomenal-licious. I'll definitely have try this out very soon for my family. Looks very delicious

Bro. adding a little pineapple and lime juices to the marinade would blow your mind. That little extra sugar does something incredible.

This looks amazing, thank you Chef John. However I can’t watch such beautiful dishes preparation while there is enforced starvation in Gaza
reply

chef john I just want to say thank you. Your truly idiot proof recipes have allowed me to masquerade as a cooking genius for years now.
