Cooking the potatoes over hot coals sets this pitmaster potato salad apart from all others. Silence: I've been making your macaroni salad since I watched that video. I modified it slightly but it's the best recipe I've found. My granddaughter asked me over the 4th if I could make something without mayo so this is video is fortuitous. I'll make this for her the next time she's here. She's 11 years old and likes to help me cook so I'll probably teach her how to make it as well.

I'd probably have to double this recipe but it looks great! Especially since I am not a fan of mayonnaise! Also I don't have a charcoal grill, I have propane; think I could still get a nice char despite not settling them into coals?

I like this with raw potatoes that are poked all over with a fork and sent to chill for an hour or two in salted water. Helps season the potatoes, and picks up that smokey flavor on the inside when cooked on the coals.

For some reason, my first thought was it needed caramelized cheese or bacon. Had BBQ chicken right before this episode dropped, but I had just plain ol' french fries. Now I'm sad this video didn't come sooner.

Dang this looks awesome, great timing too I've been on the prowl for a good no mayo tater salad. I bet some grilled corn would be amazing in it, and the yellow would make the red and green colors pop even more.

In college we sent camping overnight by a brook and made a pit in the ground and baked potatoes in the ground; I still remember how good they tasted!

I'll put an avocado to that and blue cheese and cumin, leave out cayenne, and smashed everything into a spred for sourdough bread.
