There is a problem. the ingredients, this recipe is wonderful in summer (super easy, fast, fresh and tasty) but you need excellent products; true mozzarella (not the plastic one, tasty tomatoes, fresh basil and an olive oil (evo obviously) fruttato light (the taste of the oil must be felt but should not cover mozzarella and tomatoes flavor. No sauces that give the taste here (and if you plan to use mayonnaise or other; kill yourself.

A Harmony of Taste! It's like a Simon and Garfunkel duet! The Ucchan and Nanchan of food! The Tetsuya Chiba to Asao Takamori's Ashita no Joe. That's how it tastes!

Insalata caprese tastes the best, at least in Europe, end of March, beginning of April, when the bufflons are veiling and milk is the richest, and the first Etna's and Vesuve's tomatoes are already ripe, before all the others. Then guys it tastes like the impossible made true.

Nothing beats the fresh Italian ingredients for insalatas, antipasti, contorni. One of the reasons it always wil be my favorite cucina: keep the fresh ingredients simple as they are. Oh and do not enter when nonna is busy in the cucina, she will beat you: )

I d put the salt immediately after the chopped tomatoes in the plate. That way it starts to liberate all its juices. After with the other ingredients you ll have some freaking nice dipping for the bread.

Caprese is my favorite go-to I don't want to cook tonight meal (or any other time really. I go a little rogue though and usually substitute the basil for avocado: D
