Everyday I watch all the videos you post Jamie, but can I ask a question about meat. Would you brine & also do a marinade with something like fresh pork steaks, chicken thighs, wings, & even breasts. Is their any benefit to a simple water & salt solution with a marinade in the fridge over night. So brine then marinade say over the space of two days? Thanks.

How to tell if asparagus are fresh or not. Bend one and if it snaps perfectly in half, then its fresh. If not, then the asparagus is over ripe and close to expiring. The fibers will be too rubbery in old asparagus.
