Adding orange to Ceviche is like pouring custard on an English breakfast. however, I am not sure it is possible to cook fish with them limes as the ph level is to low. the lime he is using is overgrown and too big, unlike Peruvian Ceviche. the fish cannot cook in the same way. the limes are much smaller and grown at high altitude in Peru.

If you wanna get a really good ceviche you have to go south. In Peru I've had the best ceviche ever! Their chillis are so tasty and outrageous they make a perfect match with lemmon and fish!
