Good olive oils are extra-virgin olive oils, typically made from Mediterranean olives (the biggest producers are Spain, Protugal, Greece and Italy. Since Gennaro is Italian he probably uses Italian oils. If you are looking for the vey best you have to look for first cold pressed labels and certifications like P. D. O, P. G. I. or T. S. G

You're probably looking for Extra Virgin Olive Oil. Small batch. If you go to specialty food stores, they'll typically have olive oils out for you to sample (don't buy the big bottles from Costco or Pathmart. A really good olive oil will taste like something (usually really fresh and fruity. Bad olive oil tastes like nothing.

As a food passionate he shouldn't waste all that pumpkin below the skin. Also Italy struggle so much to explain why Parmigiano is so peculiar and related to its territory (which is unbelievably small, it's a shame that a an italian like Gennaro is saying Parmesan instead of Parmigiano Reggiano or Grana Padano.

The pumpkin he is using is an Italian variety that is sold in America as Long of Naples squash. It is a type of butternut which they'd refer to as a winter squash. But here in Australia and most places in Europe we call all the mature fruits pumpkins: P

just made this using butternut squash instead of pumpkin--che buono! makes a change from the usual tomato or cream based pasta dishes. next time i am going to add a little pancetta and a splash of white wine my oh my! ;)

I made this dish exactly the same but I feel like I didnt really tasted a very juicy sauce with pasta. It was just pumpkin with stock mixed with no real flavour. Can someone tell their experiences please!

Reminds me of the good times when I lived at home with my Mum and Dad. They were both wonderful cooks. We always had everything fresh. We ate like kings and queens. I really miss them times.

0: 38 i swear i am hearing him say this is death! i know he pauses, then says licious. but it really sounds like gennaro is preparing poisoned pumpkin for a vegetarian he despises.
