The lovely Jemma Wilson gives you all of her cake decorating tips in this new series for Food Tube. From butter cream to Royal Icing Jemma has got it going on. Катя: Hi, Jemma. I really like baking, and recently started work at local pastry-cafe (don't know how to call it, and faced with problem, they have convection oven, so my muffins looks not good as in home oven. The convection blow them away, so they looks agly. higher from the one side. I can't turn it off, or make convection lower. Can you tell me how can i fix it, please?

Hi Jemma! I'm a fan, your cupcakes are so inspiring! My bread-like cakes seems to happen when I use regular all purpose flour, I haven't found a recipe yet that doesn't come out like bread when I use that. I have better results when using cake flour, light and airy cupcakes, but I see so many recipes that call for all purpose flour I think I must be doing something wrong when I use that. Any suggestions or should I just stick with my cake flour? :)

If you are getting good results with the cake flour, which will be nice and finely milled, you should just stick with that, I reckon! Where are you? Maybe All purpose is like 'Strong Flour' which should be used for bread only. I do wish the world would give one name to stuff! International confusion sucks!

All of our ovens are convection ovens so I'm not sure I can help. If your cakes are blowing away maybe your fan is faulty. Unless you mean that they rise unevenly? In which case try baking at a lower temperature, say, 5-10 degrees. It might be that they are getting too hot too quickly.

I love watching these! I've always wanted to make cupcakes but don't know where to start. Books only do so much. If you work with fondant at all I would really love to see some sort of tutorial on it like these! I absolutely love these videos: )

Haha! Bummer. I'm glad they turned out ok in the end. In an emergency lac-of-bag situation you can use a food storage bag with the corner cut out. Its a bit messy but if it's an emergency, that's the least of your worries!

Very usefull tips. Especially the one with the hand temperature. ;) I don't know if you are planning to show cupcakes with sugarpaste but i would really appreciate it. It comes out a disaster every time! Thank you!

Hi, Jemma. I can't find open star tip in my country, can u show me how 2 achieve that kind of piping using a ziplock bag. They make a few cuts on the end of the bag & it looks exactly the same can u pls explain it?
