that's actually a lovely recipe. here's how we do it in Trinidad though. for the seasoning- a handful each of Spanish thyme, cilantro, spring onions or chives, celery, parsley 1 large onion 6 cloves garlic 2 pimentos 1 scotch bonnet pepper 1 cup water 1/2 cup white vinegar 2 tbsp salt now throw all that into a food processor, pulse till it becomes like a loose paste (add more water if needed. take your chicken parts and season with this paste, about 2 tsp per piece and let marinate overnight if possible. then fry as you like. this 'Green Seasoning as we call it locally, can store up to 3 months in a tightly sealed jar in the fridge, so any remaining seasoning can be used to season any type of meat you like. And that's how we do it in Trinidad. try it and let me know what you think of it.

nonsense. this is how one place made fried chicken so he calls it West Indian. West Indian does not mean Jamaican. (ALLSPICE) ALLSPICE IS NOT ESSENTIAL IN WEST INDIAN COOKING. It seems its only essential in some Jamaican dishes. The only thing that similar in most West Indian cooking is TYME Most West Indians or West Indian fast food places make fried chicken similar to Southern fried chicken from the United States. Its not influenced from there but it just developed similarly.

So you put in all that effort to brown the chicken and get the skin nice and crispy and then pop it in the oven and cover it? The moisture from the lid totally ruins the chicken skin as you can see at 3: 35 the skin looks rather rubbery. Would be best to slow cook it to get it nice and fall apart and then fry it at a very high temperature to just crisp up the skin.

looks yummy! but western food only taste salty and spicy in the outside and kinda boring when we eat the part that isnt really seasoned. try asian food like indonesian, you can taste the seasoning from skin to bone. we dont use garlic and paprika powder, we use real chili which is the real deal, mamacita

i know im late but this looks great. btw im not from the west indies but my friends from there always tell me to wash my meat in vnnegar before marinating my food wondering if anyone else ever heard of tht trick. apperently it gets rid of the smell of rotting flesh and makes the food smell more fresh

Nope. Not West Indian fried chicken more like Jamaican inspired brown? chicken. The time he took to push it in the oven he could have fried all those pieces of chicken in no time. Also not all the West Indies uses the same spices in their food.

First fry in hot oil, then bake in an Oven at 180C for 30 mins. That chicken is going to be dry as hell. Why would you want to overcook that lovely bird to oblivion? And seriously just rubbing with all-spice does NOT make it West-Indian.

Unfortunately I cannot even smell banana from a kilometer without getting sick. What can I use as sauce to make a good contrast with the spices? Maybe some yoghurt with coriander?

Looks really nice, only thing i think i would change is that i would as some honey and spread it out on the chicken before adding the tin foil
