I always make my (classic) mojitos with sparkling water and since I don't eat any sugar I use the artificial sugar in powder form (same little tablets you can use in your coffee or tea, but then in powder form. But making one with prosecco seems like an interesting idea, def got to try it out. (Also I use A LOT more mint even if I make it for 1 person, but that's a taste issue I guess. And I bash it around for a long time to get the mint taste to the max)

I love how Jamie was the one making moves on sugar, saying it's bad. Yet, while making simple syrup, he uses equal parts of water and sugar. LMAO. I'm myself making cocktails, and I find them too sweet when using equal proportions of water and sugar. I tend to go 2: 1 ratio water/sugar. Since all the cocktails are pretty much sweet from the alcohol itself.

We had a fiasco with a metal shaker last summer. Was on vacation and the shaker got stuck together while my bf [who use to be a bartender] was serving drinks. None of the dudes could separate it in time to save the drink. xD

Why are you doing cocktails Jamie? I love your food-related stuff, but you are no bartender, why not just leave the drinks to the professionals?
