My dad was a butcher in the early-70's and he said that stuff like shanks, tail and chuck were considered dog food, and they could barely give it away. Now all the fancy restaurants are serving these secondary cuts in amazing ways so the price of them has gone through the roof. He's so old school he is constantly disgusted at the cost of meat these days.

That looked tasty brov I eat allot of tinned oxtail soups tbh! But is butchers on the highroad, so might try it out! I'm a mash guy myself! Normally with beef stew beef carrot cabbish onion cellery salt pepper water! Cook in oven covered for hour or two and thicken half out before serving but uncovered for last 30 minutes! Banging!

2nd time I made this and a little disappointed. 1st time I didn't use enough oxtail, 1. 5 pound so it was very tomato soupy. This time. aha. I had 3. 5 lbs. But again too tomato soupy. None of that dark meaty quality. Maybe because I used just a little beer and it was Budweiser

I tried making this, it was very tasty but mine reduced nowhere to what this was. Mine was very watery and had to take an extra step to strain the liquid, boil some off and use the immersion blender. I will do again but it's a full day job.

Now Dr tell him off I'm telling you off because you MUST NOT use the pasta water for anything other than pouring down the sink while hot or boiling to shift the scum thatsdown therealready My mam said 1959

Thanks for that OXTAIL stew, in the past, I used to cook the OXTAIL with sugar beans, well here's something new for me to try, but if the beer is left out, is there something else to take its place

My sauce is runnier than I wanted. How do I thicken it? PS. I used a slow cooker for the last cooking step. Also, I added bacon in the early stages of cooking and it made the sauce
