Reminds me of a recipe where I stuff chicken with basil and mozzarella and wrap it in prosciutto. I might incorporate some ideas from this video. For example, I generally just bake mine in foil wraps because it keeps everything moist and in-tact, but I might give pan-frying it a go. I haven't managed to put together the right kind of sauce yet, but serving it in it's own juices tends to be amazing already. If this is anything like what I make, then I'd recommend this recipe 100%.

I actually ended up making this last night - tastes great! For the mushrooms, I mostly just used diced fresh portobellos and reconstituted several dried shiitakes in chicken broth. Made for a very aromatic sauce! I also thought about throwing in a sprig of fresh rosemary while it simmered, but decided against it. Now I'm kicking myself - that might have turned out even better!

The recipe looks delicious! I will definitely try this when I get a chance. Though I might add some marsala wine to the mushroom sauce. Also, towards the end I was thinking that it might be good with some parsley and then immediately you suggested adding the parsley lol! I can't wait to see more recipes from you on foodtube!

Hi Donal, I definitely think that I am going to become obsessed with this recipe, so good! BTW - I was in in a little village called Duagh in Ireland over the weekend working at a fundraiser with one of the grads from Fifteen, loved every minute of it, such a great country and warm and friendly people: )

Donal, this video made me nervous. Through most of it you were standing behind the yellow cutting board that you had cut the chicken on. I was afraid you were going to start cutting vegetables. Cross-contamination! Being the accomplished cook that you are, I should not have worried. Good handwashing.

This looks lovely. One minor quibble. I have been cooking mushrooms just about exactly like this for decades, and i have found that I get a much better garlic flavor if I wait to add it until much later. Garlic goes in, gets cooked long enough to become fragrant, and then in with the cream.

For those of us that don't have this brand of cheese, breadcrumb & herb mix, what would you say is the ratio of cheese to bread & what sort of herbs are in the mix? I've never been great at picking herbs to compliment other flavours in a dish. Help is appreciated! Thanks!

This looks sooooo good! I need to try this! I live in Denmark though, and i don't believe we have the mixture to put inside the chicken. Can i just use breadcrums and cheese, and in that case, what kind of cheese?
