This is a fantastic quick tomato soup recipe simply bursting with the flavours of roasted red peppers, garlic and lime. Rice adds an awesome creaminess to the dish which is topped with a jalape o and yogurt dressing and served with tortilla crisps, feta cheese, tomatoes and chilli. This easy recipe is from Jamie s 15 Minute Meals television series - first aired on Channel 4 in 2012. If you're in the UK or Ireland you can watch the whole series right here: Read the full recipe on page 204 of Jamie's 15 Minute Meals book or take a look at the ingredient list below for the basics: Soup: 1 small bunch of spring onions olive oil 1 bunch of fresh coriander 4 cloves of garlic 80g basmati rice 450g jarred red peppers 2 x 400g tins of chopped tomatoes 250ml fat-free natural yoghurt 2 tsp pickled jalape o chillies 1/2 a bunch of fresh mint 2 limes 800ml water (optional) Sprinkles: 1 handful of cherry tomatoes 1 ripe avocado 30g feta cheese Nachos: 2-3 fresh red and green chilies 175g low-salt tortilla chips 50g cheddar cheese

Wow delicious mexican inspired recipe, not authentic but why ppl making a big deal out if it? To all ppl complaining about that you should try something diferent, you'll amaze discovering new combination of flavors. Btw fetta cheese is a great substitute, its texture is like mexican fresh cheese with the flavor of aged cotija, perfect!

Just made this and it was absolutely delicious. Flavors were spot on, not too sour, not too spicy. The spicy mint yogurt adds that extra kick and cuts through the whole thing to give it complexity and balance. Just awesome, the best thing is I got 2 more portions for starters the day tomorrow and after that; )

I really love your recipes, huge fan of you. I was looking for a differente recipe of tomate soup, glad I found this! But. did you just forget to put salt on the soup or there was no need to do that? ps. brasilian/portuguese fan.

Looks great. I love that it uses yogurt instead of sour cream as I can't always find it in Asia. I'm thinking this will be a nice relaxing weekend food. Another of my favorite Mexican soups is the Corn. Yum yum yum!

As a Mexican I must say that feta cheese goes great with mexican food, ever tried some enchiladas with feta cheese? If you can't find cotija or asadera, feta is a truly brilliant alternative!

It is obvious you wanna make those videos as short as possible, but there was no word about avocados that was used at the end! :D Besides, I've just made this soup and it's delicious. :)

This recipe is great! I didn't have all of the exact ingredients but I improvised! Threw it all in the crock pot, came home from class and had a great dinner ready! two thumbs up.

What a nice and delicious version of the mexican Sopa de Tortilla (Tortilla Soup, because i've never seen a Tomato Soup here in Mexico) Well done Jamie, big hug from sunny Mexico x

Always a favourite recipe, trying it again now we've hit autumn proper. Great comfort food with a spicy kick. Double down on the nibbles every time for a avocado and feta treat.
