in Italy we say that risotto should be all'onda meaning it should move and not be all clumped up together and dry. that risotto looked a bit on the dry side. also we would use a shallot (a tiny bit) because red onions are quite overpowering. and contrary to popular belief Italians don't cook with a lot of onion and garlic. nonetheless bravo genna' la prossima volta metti un po' piu di brodo. un bacione

Geno, tonight I made risotto with mushrooms and spinach. I had grated some romano cheese for the rissoto when I remembered that I had some bleu cheese as well. I added maybe 50 grams and a splash of heavy cream to my risotto. Oh my goodness! It was heavenly! Not over powering with the bleu cheese flavor, just enough to make it yummy.

You chefs! Stop putting animal stock in risottos and pastas! If i want chicken stock i'll eat chicken soup. If i want beef stock i'll eat some kind of beefy thing. If i want to taste some risotto i need the taste of the rise to be pure and clean. Don't forget all the veggies you've put in.

This is the first dish of Gennaros's that I actually made because I had all the ingredients at home already (okay except for mint. It was simply amazing. So easy to make, so simple to prepare, and so few ingredients! This will definitely be a staple in my home.

Favourite rissoto? Hmm, probably have to be something like this, I have never made a risotto with GOOD ingredients, so I never got much flavour, just a fantastic texture. With fresh flavours like the sweet fresh peas, this must be to die for!

I have to say, Gennaro makes me feel like he's an awesome uncle visiting and sharing the best recipes with me. He makes every movement feel so personal. I can't imagine the pleasure he is to have in the kitchen.

No I know what i will cook on Saturday. Yet, no mint since it gives a stomachache to my mom, and obviously I will use the no-stir method (like we do here in Milano): just as much creamyness with a quarter of the hassle!

Have you ever made Farrotto? Farro was a big part of the Roman diet, and I tried it for the first time today. How this wonderfully delicious grain ever fell out of popular use, is beyond me.

Omg! Thumbs up for the passion in the speaking of this man! I loved it! Please make a risotto with mushrooms, any kind. I love mushrooms and I'll love to taste that risotto made the original Italian way
