Nice. Have you ever seen/used dried berberis? If not you'll love them as another alternative to the pomegranite. You can buy bags of it from Iranian grocers (Reza in Kensington High Street will have them. You soak them first to get rid of all the sand and dirt and then fish them out of the water after a few washes. Then you can either add it to the food while cooking or add them afterwards. Tart and delicious. Try them. :)

I made the cauliflower rice and it was absolutely delicious. I used habanero peppers instead of what was suggested and I did not grill the corn, opting to use loose, organic corn instead. I'm thinking that instead of the pomegranates, which add nice texture but not enough of a contrast of sweet flavor, next time I'll use dried cranberries. Nice dish. Will definitely be making this one regularly.

Cauliflower replacements. The rice replacement is great for the low carbs but it doesn't say much about cauliflower itself. Cauliflower and cheese however is great if ur really into tasting absolutely fresh good quality tasty cauliflower. Cauliflower cheese is a 'cauliflower' dish.

These are all great ideas and I like them all. The only issue I had was when you said that you want to use oat milk in order to keep the pancakes 'dairy free' yet you'd just cracked eggs into the food processor? Any way to do it without, so it is truly dairy free for us vegans please?

it's not dairy free, eggs are dairy. too bad he couldn't come up with some vegan pancakes. Cauliflower crackers, pizza dough, faux mashed potatoes with a cashew cream sauce instead of sour cream and butter to make 'em smooth and creamy. cauliflower is such an awesome veg!

I like cauliflower, but taking a slice and just frying in a pan and telling people hey look, it's meaty, it's a steak! is a bit like telling people a quiche is a great alternative version of a chocolate cake. Similar shape maybe, completely different profiles.

Everyone sounds a wee bit butthurt by the terminology used. But only when the word 'steak' was used, I see no comments saying 'Err, yer, but that's not rice, that's not a pancake'. Why are we so zealous when it comes to dead body parts? Cultural conditioning?

This guy is so full of bluster it is no wonder he is a busker. It is where he should have stayed. Why talk about a cauliflower steak (which is just a wedge of fried cauliflower if he does not talk about that thing with it? No wonder he is a mate of Jamie.

Been on Atkins for 2 months, and finding out just how diverse cauliflower can be. Actually just made 'mash' with steamed cauliflower blitzed with butter, garlic, cheese, bacon and a little bit of cream. Perfect substitute for potatoes.
