This is crazy! I just made this on Saturday.
I used dried cranberries but almost used cherries until I realized I had cranberries in my trail mix.
Also, I made it the night before and then added more mayo the next day because it seemed to soak it up.
It's so much better the next day (IMO.
I had leftovers so I froze some, but doubtful it will hold it's appeal!

I'm not a fan of grapes. I like to use a chopped apple. That and some walnuts are my go to additions. I like the chicken shredded a bit more as well. I will sometimes use part mayo and part Greek yogurt. Edited to add, I'm with another poster who says ciabatta rolls are very good for this.

I hate that trend of shredding and processing chicken into a paste for chicken salad and a lot of restaurants do it. Yuck. I can use roasted chicken for sure but I'm going to put it in chunks like you do it. Add grape chicken salad is my favorite.

I know of at least one commercial recipe that uses chopped water chestnuts for crunch along with the celery in their chicken salad. They have just the right ratio that makes for a very delicious chicken salad for store bought.

I have forgotten to plug in my slow cooker too. I panicked thinking my new slow cooker was already malfunctioning! Operator error. Thank goodness it wasn’t sitting for long when I went back into the kitchen!

Chopped apples are also good in the meat salads. (Chicken salad, ham salad, tuna salad, etc) They add a touch of sweetness & a nice crunch. In our meat salads, we always had celery, apples & pecans.

Your recipe looks delicious
I've found recipes with a few other ingredients like onions, etc. I don't like all that added ingredients. I definitely need to make yours. can't wait to try it

I've never seen chicken sandwiches made with croissants before. I think that would be too sweet for my English palate, but an interesting idea. Great chicken salad/filling.

Wish I had some! It's good on regular bread. I used to always eat it with a French loaf and it's also very good on ciabatta.
