Omg Simply Mama, great idea! I love cobbler desserts. But I also love chicken pot pies! What a great recipe. My usual guilty pleasure is KFC pot pies. Problem is I'm not supposed to have gluten But one night i was craving the flavor of pot pie so strongly. had to make it but never had. Sooo. cooked a 10 oz. bag of frozen mixed veggies (like you, threw in cans of cream of mushroom & chicken soups (i know some gluten, 2 canned chicken, 1 canned potatoes, salt, pepper, sage, thyme, onion & garlic powders. No crust. I was surprised at the flavor. Tasty Came together in 20 -25 min!

My wife and I would love this, but I know me. Instead of making a roux, I’d use cream of chicken soup for the gravy. In beef dishes calling for a gravy component I’d use Campbell’s Golden Mushroom soup. Not only is it easy, I honestly prefer it to homemade gravy. Do you ever use cheats like this

I made rhubarb cobbler for dessert tonight. My 16 and 17 year old sons ate it as an appetizer, while it was cooling. I didn't even get a taste. I'll make the chicken cobbler for Tuesday supper, but I will need the whole chicken. Teenage boys!

That left over chicken broth from your baked chicken would have been perfect that crust looks very crusty which I love on my pies. But how could I make that with double crusty ( top& bottom) or not able to Without it getting soggy

On point, I bought 2 whole chickens pressure cooked them debunked JUST FOR THE SALAD, AND FREEZE the rest for future recipes. Thank you for such satisfying easy meals.

That’s crazy because I buy chicken salad from Sam’s Club and croissants and cut them open the exact same way for chicken salad sandwiches!

Sounds good I would have to add celery because I live it. We love chicken pot pie along with chicken & dumplings. So this should fit in.
